I made this up one night because I had an extra lemon left over from making lemon bars and I was getting tired of my (already awesome) balsamic vinaigrette.
Juice of one large lemon 1/4 cup orange juice 3 Tbsp. white sugar 3 Tbsp. white vinegar 4 large basil leaves (fresh) minced fine 1/4 tsp. garlic powder 1/2 cup extra virgin olive oil
Whisk together until sugar dissolves. Very bright tasting and great when it is hot outside. Serve over crunchy vegetables or in a salad. NOTE: the 3 tablespoons of sugar helps to cut the strong acidity of the lemon. I actually like that tart flavor so when I made this a second time I cut the sugar back to 1 tablespoon. If you are concerned about the sugar, try it with one tablespoon first and if it is too tart, add another. OR you could try it with a tablespoon of honey. I haven't put honey in this dressing so I can't say that it would be wonderful but I have put honey into my balsamic dressing before and it added a nice flavor so I think it would probably taste good.
