Manicotti
1 tub Ricotta 4 cups spaghetti sauce 1 box manicotti noodles (or large stuffing shells) 1 egg 1 1/2 tbsp italian seasoning
Oven to 350 Boil noodles until just tender, strain and rinse in cold water. Blend ricotta egg and italian in a mixing bowl. Spoon into shells, layer in baking pan. Cover in sauce, bake for 45 minutes or until ricotta tests crumbly.

I haven't made manicotti but I made stuffed shells once. I also made a ricotta pie once.
Its good stuff, but these days I try to avoid the calories. Every time I go to an Italian restaurant, I look longingly at the manicotti and cannolis.
